He smoked a boston butt this weekend (for 14 hours!) for our family get-together. I made some homemade gluten-free hamburger buns that rocked and loaded up my sandwich with BBQ heaven, including his homemade sauce, he made just for me (corn-free)! Isn’t he just a sweetie!? I’ve always loved to bake so just because I’ve gone gluten free does NOT mean I’m going to quit baking. I just had to change up a few things! Thank God for the other pioneers in gluten free baking out there! I’ve found some great recipes. Here is a delicious breakfast muffin recipe I found: http://www.elanaspantry.com/blueberry-muffins/. I decided to do raspberry instead of blueberries because I had some fresh ones. They turned out so great! Heat them in the microwave in the morning and put a little butter on them, and they will melt in your mouth!
Also, I have adapted my favorite chocolate chip cookie recipe from Ellie Krieger (Triple Chocolate Cookies). She uses both all purpose and whole wheat flour, so I just replaced it with white rice flour. And of course I had to add xantham gum (authentic foods, corn-free) to the mix. For whatever reason, gluten free cookies spread out a lot while cooking. But they taste great!

For margarita style pizza, I just do an olive oil and minced garlic base. Then I add mozzarella and cheddar cheese and the sliced tomatoes. Since I can’t have basil right now, I’ll do some fresh parsley. And…Ta-da!

We took the leftover slices of our veggie pizza and reheated them on the grill! Oh my, it was better than the first time! The crust got very crispy, which was lacking a bit the first time. I think I’d like to do this pizza dough recipe again on the grill. I love a good crispy crust!

I was hoping for a dough that was a bit easier to work with, not so sticky, and it was good! I did roll it out on top of the pizza stone since gluten free dough crumbles if you touch it, hah! Next I loaded it up with a basic pizza sauce and chopped garlic, then a chopped portobello mushroom, zucchini and tomato. And of course, I topped it with cheese.
Finished product was delicious!
Proud to say that I was able to wear my favorite pair of jeans yesterday that had been stuffed in the back of my closet. I hadn’t been able to part with them for the past 3 years. Glad I didn’t : )
First of all, I’d like to say thank God I can have heavy cream! 🙂 A few nights ago, I made an eggplant pasta recipe by Giada de Laurentiis. I couldn’t find the recipe on her website, but I got it out of her book, Giada’s Kitchen.
You chop up an eggplant and 3 cloves of garlic and put into a large bowl with cherry tomatoes. You toss it all together with some oil, salt, pepper and red pepper flakes. Then you spread it out onto a pan and roast in the oven for about 30 minutes. Afterwards, you puree it all in a food processor with a bit more oil to create your sauce. Meanwhile, I cooked rice penne style pasta, reserving the pasta water, and roasted some pine nuts in the oven. You mix the pasta with the puree in a large bowl, adding 1 1/2 cups pasta water a 1/2 cup at a time to make it saucy. You add some parmesan cheese and sprinkle the pine nuts on top. I’ve never had pine nuts in a dish like this and boy, were they awesome. The aroma alone while they are roasting is to die for! Now, this recipe could be dairy-free if you used pecorino romano, which is a sheep’s cheese. That would be just as great!
Stephen and I had this for dinner a couple of nights ago. It was really great! We had leftovers, of course, which I got out last night for dinner. It looked a little flat so I decided to spruce it up for another meal. I put one serving of the leftover dish in a pan on the stove and added some cream, probably 1/2 cup or so. I heated it up, letting the cream thicken slightly with the eggplant puree. To serve, I topped it off with some fresh grated parmesan cheese. Now that the pine nuts were really mixed in with the dish, there was a great nutty flavor. The creamy eggplant sauce was terrific! I think I might even like the recipe with the cream added a little better than the original one! Here is a picture of the cream sauce version:

I would love to give props to my husband, Stephen, who is an excellent cook. We did Vietnamese Banh Mi sandwiches with pulled pork and man, oh man, they were delicious!! Stephen is great with BBQ and he smoked two boston butts on his Weber smoker. He chopped up cucumbers, a jalapeno, and red onions as garnishes. Then he marinated grated Japanese radish and carrots in vinegar overnight so they were pickled. That was by far the best topping! That radish smells funky, but it tastes awesome! I forgot to take a picture of the finished product. Sorry! But trust me; we will be doing that one again!
This is my first official blog post! I decided to start a blog as a great way to chronicle my journey becoming gluten-free. This all started when my sister, Bri, was feeling ill and couldn’t figure out the root of the problem. After doing a lot of research she found a blood test through ALCAT labs that can determine what food intolerances you have. Bri suspected she was gluten intolerant and was relieved to find out that was the cause of her troubles. The blood test instructs you to give up any foods in your severe intolerance category for 6 months, foods in your moderate category for 3-6 months, and to avoid as much as possible all the foods in your mild category. She was able to do that and saw immediate results. The point is to reintroduce the problem foods one at a time and figure out which ones actually give you noticeable symptoms. Now, she only has to be off of gluten and feels amazing. All this led to my father and myself getting the test done. My dad is about 3 months ahead of me, and to no surprise, is feeling the best he’s ever felt in years.
I’ve only been on my journey since the 14th, so I’ve got a long ways to go. Unfortunately, for me, my test results were difficult to digest (ha ha). My gluten intolerance was in the severe category, along with mustard, scallops and few fish that I don’t typically eat anyway. My moderate column was the most difficult with having corn, chicken and beef, along with basil and shrimp and a few other things on there that are hard to avoid. And by the way, corn is in everything, in case you didn’t know. Praise God, I don’t also have to deal with a dairy intolerance! Otherwise, I think I would die from starvation, hah! As I’m sure you can tell, it’s been hard to cook having to eliminate chicken and beef from my diet. By the end of the 3 months, when I can finally reintroduce one of those, you might find me waddling around gobbling like a turkey or snorting like a pig from consuming so much of those! But hey, if I was walking around, snorting like a pig, at least I’d have something in common with my nine-month-old golden retriever named Parker. That’s what he does all the time because he’s constantly trying to find food! He’s got a crazy food drive. I’ll post pictures of him and my other one, Piper later : )
Thankfully, there are some good fish options I can have as well so I’ll have to get creative with the cooking, I guess. And I can have most vegetables and fruit. So far I have found a pretty good pizza dough recipe that’s been working well also. I will keep you guys posted on my journey!
